Homemade Wheat Bread

Several of my friends saw my post on FB about making bread and asked for the recipe. So here you are guys!  This is my go to recipe. I have tried several others but still go back to this.
Yummy Homemade Wheat Bread 
This recipe came from a Relief Society meeting on self reliance. I don't have the name of the lady and I don't remember the ward I was a guest speaker for. These are proportions for a Bosch mixer. If you have a Kitchenaid, just cut it in half and that will work.

Bake: 350
Yield: 4 large loaves
Time: about 2 hours including rise time

Ingredients
14-16 cups whole wheat flour
2 rounded Tbs yeast
1/2 cup high-gluten flour
1/4 cup dough enhancer (or 2Tbs lemon juice or 500 mg Vit C)
6 cups very warm water
1/2 cup vegetable oil
1/2 cup honey or brown sugar (honey is best)
1 1/2 Tbs salt

Directions: Place 9 cups fresh flour into mixer with kneading arm. Add dry yeast and gluten. Pulse to mix. Add water and mix for 1 minute. Turn off mixer, cover, and let dough sponge for 10 minutes. This makes the bread have a lighter texture. Add oil, honey, lemon juice, and salt. Turn on mixer, and quickly add remaining flour, 1 cup at a time until dough forms a mass and clean the sides of the bowl. I generally use a mix of wheat and white flour. Turn mixer to high and knead for 8 minutes. If kneading by hand, knead at least 12 minutes until dough is smooth and elastic.

Preheat oven to 150 during this time. Lightly oil hands and counter surface. Divide dough into equal portions. Shape into loaves and place in greased bread pans. Turn off oven. Place bread in oven, arranging pans with space to allow heat to circulate freely. Set kitchen timer and watch closely. Let rise until almost double in bulk, about 20-30 minutes. Leave bread in oven and turn heat to 350. Bread will continue to rise a little more. Bake for 30 minutes until light golden brown. Immediately remove from pans and let cool on wire rack. Beware of ravaging children. Use extreme caution if there is butter or jam nearby!

Top 10 Go To Recipes....

So I noticed a fellow blogger commenting about having no clue what to fix for dinner and asking for suggestions. It got me thinking what my "go to" recipes were. You know the ones....where you don't have to pull the recipe out....where you can make it without much thought and even less time....
YEAH!
Those dinners!
You know we all have them. 
The moments you go Awe Crap!
 Is it time to fix dinner already?!?
....Unless your clan is like mine and never stop eating. My kitchen seems to be an endless cycle of snack and meals. Kinda expected with 4 boys. Add in the friends (boys) that are always hanging around (and welcomed) and yeah, the kitchen never seems to close....
Anyway, here is my go to list. I hope it helps get you outa that awe crap rut....
In no particular order:
  1. Spaghetti- the boys all love it and score, it's cheap too. Easy to fix from the pantry.
  2. Fruity chicken salad- salad, grilled chicken, mandarin oranges, grapes, Parmesan cheese tossed together, topped with poppy seed dressing and you are ready to go. Yep, even the boys enjoy it.
  3. Hamburger Casserole- browned hamburger, shell pasta, green beans, corn, carrots, olives, cream of mushroom soup. Mixed together and enjoy. Great cooking from the pantry.
  4. Pinwheels- browned hamburger rolled up and baked in biscuit dough like cinnamon rolls, topped with tomatoe soup or gravy. One of my favorite meals.
  5. BBQ- anything thrown on the grill= easy, yummy summer meals
  6. Taco Salad
  7. Chicken Salad wraps
  8. Roast- or anything tossed in the crockpot
  9. Steak or chicken Fajitas- A1, Worcestershire sauce, onion, peppers, cheese, tomatoes, shells= YUMMY
  10. Breakfast for dinner- my boys LOVE pancakes. It's a pantry staple and quick to fix. Add eggs or bacon and my troop is happy.
We buy beef and pork from a rancher friend (the only way to buy you meat!) and keep it in a big chest freezer. Just add vegis and we are good to go. 

So there you are. I have a few others but these will cycle round the month to fill the last minute holes or maybe just fill the hole until I go shopping again. I love to keep recipes on hand that come straight from the pantry. Helps my preparedness skills too.

Homemade refried beans

I had heard about making refried beans in your crockpot but I had never tried it. Sometimes you just have to say, hmm I am gonna do this and then DO IT RIGHT THEN!

Take 1 small crockpot
1 bag of beans (yep, just the bag of dried beans)
(I tried pinto and black, both were great)
Throw in some garlic salt and sliced onion
Add some chicken boullion or a can of chicken broth
Top it off with water (you may have to add more as the beans soak it up)
Let cook for about 4-5 hrs on high. Just until the beans are easily mashed.

Drain off the juices but save it. Pour the beans in your mixer and mash away. Add juice to get the right consistency.
 
Such a simple and cheap recipe. Made better by being a long term food storage item. No more need to resort to cheap PB&J when you haven't made it to the store!
My boys loved it! It was a perfect after school snack. Just spread on a tortilla and sprinkle with cheese.
It stayed good for a week in my mason jar.

Bath Fizzies....

With cold and flu season upon us I thought it would be perfect to try making my own fizzies. We used to use these all the time, from the store though. I haven't seen them for a while but making my own is so much cheaper and E.A.S.Y!!! 
Here is the original post.

And the how to...
pour about 2 cups baking soda in a bowl. Add enough water to make a paste. Add a little at a time to make it feel like putty.
Add your essential oils. I have the Breath from doTerra. It is great for sinus issues.
Eucalyptus, Lavendar, and Rosemary are some other suggestions to use. Add 40-45 drops total.
Mix well. Pour into cupcake wrappers and let dry overnight.
Pop 'em out and store in a Mason jar or some other container. I left mine in the wrappers to help the not break up in the container. 
Then just pop one in the shower and let the oils steam away your stuffy nose....plus help to relax you!

Mini Pumpkin pies

 These are the miny pumpkin pies in a muffin tin. How to make it all you need is some pie crust is an a can of pumpkin pie filling. What you must do is role your dough out; then take a cup or something big enough to make circles in your dough to have them fit your muffin tin.
Here I am using a turkey baster to take my pumpkin pie (follow can instructions) filling to fill the crusts which have been inserted in the greased muffin tin.

 I had to shoo my brothers away before they ate the mix before it was cooked.
 This is the final product of your effort. If you are wondering what to use the rest for use it for anything. I just put it in pie plates and cooked it.

No Bake Nutella Cheesecake

I saw this recipe on Pinterest and thought it looked fun because it is easy and simple. This is a no bake nutella cheesecake recipe. We love nutella at our house, as in we, put it on every thing from toast to sandwiches. If you don't know what nutella is then let me tell you, nutella is a hazelnut spread with some chocolate in it. 
When I started to make it I thought we were out of cream cheese so I thought I could substitute 8 ounces of cream cheese with cream butter (P.S. not so good it is to buttery with 3 tablespoons more).




 Try this Yourself


For the Crust

12 Oreo Cookies, crushed into crumbs

3 tablespoons unsalted butter, melted

For the Filling

1 (8 ounce) package cream cheese, softened

2/3 cup Nutella

1 teaspoon pure vanilla extract

1 (8 ounce) tub frozen whipped topping, thawed

Directions:
1. In a medium bowl, stir together the Oreo cookie crumbs and melted butter. Evenly divide the crumbs between your individual serving dishes and press into the bottoms of the dishes to form a crust layer.
2. In a large bowl, with an electric mixer, beat the cream cheese and Nutella until smooth. Add vanilla and mix to combine. Using a rubber spatula, fold in the whipped topping until well blended and no streaks remain.
3. Evenly pipe or spoon the filling into individual serving dishes. Cover with plastic wrap and refrigerate for at least 2 hours before serving.
4. If desired, garnish with additional whipped topping, chocolate shavings, and/or toasted, chopped hazelnuts.

Homemade Rootbeer

There is just something about a good batch of homemade rootbeer.
The taste is great but making it is just as much fun.
Dry ice is just....so....FUN. I mean LOOK at all that steam, smoke, whatever. Yeah, the boys had a great time too.
So here is the recipe I used....
1 bottle rootbeer extract
5 pounds sugar
5 gallons water
5 pounds dry ice.
Mix it together and let it 'cook' for a couple of hours. Careful not to spill any, all that sugar makes it very sticky. Doing it with little boys clamoring about wiggling fingers through the steam is a must!
What a fun, simply, family activity.

Fluffy Cheesecake...

Easy to make.
Lovely to enjoy!
Fluffy Cheesecake
1 package cream cheese
1 cup sour cream
1/2 cup sugar
1 tsp vanilla
whip together, pour into graham cracker crust and chill 3 hours.
Top with your favorite cheesecake topping and enjoy!
mm-mmm-mmmm!
I like cherry but dear hubby likes blueberry....oh shucks, that means I have to make 2.
Give it a try. Betcha can't eat just one piece. ;-)

Menu and new cooking blogs!

With the addition of 2 new blogs I am excited to try some new main dishes. Not to mention cooler weather means we and enjoy our favorite soups and chilis!
This week at our house....

For Desert I plan on trying a new Lemonade Pie from my dear friend. hmmm, maybe I will make that tonight! She promises it is refreshingly delightful! We will see and I will post pictures and the recipe.

Now I have to put a shout out for The Country Cook. I found her blog through Mommy's Kitchen Sunday Potluck link party. I love cooks that stick with basic ingredients in my pantry. They are even better when they remind me of growing up on the farm and in the country. It all comes down to comfort food for me but these are the biggest hits with my boys too. They haven't lived on a farm but they love to visit my uncles farm. Something about the dirt in your toes and the thrill of riding a tractor....
but I digress....
The Country Cook has lots of fun recipes that look great.
Shhh, please don't tell dear hubby she even has a recipe for "Magic Shell" ice cream topping.
He loves the stuff that will freeze on your ice cream. All my boys devour it (I know this is a common occurance) and I haven't boughten it in a while which means they could go through some withdrawls when I buy it again!
Then for desert try her Shorcut Cheese Danish, I plan on trying it!
Ooh, Yummy!
These will be great recipes for my boys to learn to cook with too. At 11 and 9 they are wanting to learn to cook more. Love that! It helps that they have been watching food networks "Chopped" show with dad. It becomes a joke if your dish is chopped or not. Makes me smile and welcome them into the kitchen. I will have to have them pick a night to help cook and let them go at it while I supervise. Before long I will have them searching blogs for more great recipes to try! Who said having all boys was tough?!

A New Cooking Blog!

Well, new to me at least......
I walked into work this week and found a co-worker looking at

I knew I needed to take a look. My menus have been in a rut lately, just waiting for cooler weather to make delicious soups and chili's.
Let me tell you what! I am excited to redo my menu for this coming week. I didn't finish my shopping yesterday and now I'm glad!
Her blog runner is just my style. Family meals, country style hit a nerve for me as well.
Then I scrolled down to find....
Then we had to search for a Peach Cobbler
ooh, my mouth is watering already! Fresh peaches wrapped in a warm flakey crust. Add a scoop of French vanilla ice cream! Peach Cobbler A la Mode!
My boys are eating school lunch (we are blessed to have a GOOD school lunch, homemade style) but these are good enough to tempt me to return to my old ways...
Comfort food... Turkey & Stuffing on a weeknight!
Okay! ENOUGH ALREADY! My belly is growling and I've got work to do. Dinner is still a ways off. I would love to show you more but I just can't handle it. Take a look for yourself. A peek just won't do.

This weeks menu 8/14 & Cafe Rio Dressing!

We will be visiting family this weekend so our menu is short but I have a couple of recipes to entice you this week....
First, at Casa del Johnson's you can join us for......
Spaghetti
Tacos

Now for a recipe to make your friends drool. I love Cafe Rio's pork salad but the dressing is half the delight. I have the recipe for the pork but didn't realize that I had the recipe for the dressing too. Thank you to my Relief Society friends in Idaho. The put together a small recipe book to give as birthday gifts last year. We moved before my birthday came up but I had been looking forward to this treasure. Ward cook books are some of the best! I begged a copy and they had sympathy on this country gal. I often forget it sitting in the top of my cupboard but always pull it out when I'm in need of inspiration. I was delighted to find this recipe. I hope you enjoy it as well!

Cafe Rio Cilantro Ranch Dressing
1 pkg Hidden Valley Ranch Dressing Mix
3 Tbs salsa verde
1/2 tsp tabasco sauce
1/2 bunch fresh cilantro
2-3 small cloves garlic
3/4 cup mayonnaise
3/4 cup sour cream
grated lime peel and juice from one lime
buttermilk to thin to correct consistency
Place all ingredients in a blender and mix until smooth. Serve with Cafe Rio Sweet Pork.

This week menu 8/7/11

I enjoyed a lovely birthday of relaxing and visiting with friends yesterday. My request was to not cook and not do dishes. I am proud to say my house of boys delivered! Dad cooked and all the boys pitched in to clean up.
I had planned the menu already so here you go. Hope this helps give you some ideas....

Burrito Casserole

Taco Salad (I have lettuce ready in my garden!)

Grilled Ham and Cheese- extra yummy on homemade bread!

Next month we will be purchasing 1/2 a cow and thankfully restock our freezer with some beef. For now we are using chicken more because it's simply cheaper. Thankfully there are oodles of recipes for chicken. Plus it is lean protein.
I am looking ohhh, soo forward to fall.
It is my favorite season, warm days, cool nights and the BAKING!! Oh MY!
And guess what?! Fall is just around the corner!

This weeks menu 7/31

I am looking forward to fall baking and cooking. In the heat of the summer I don't want to stand in front of the stove, who does. Dear hubby gets tired of all the sandwiches he eats everyday at work and although I love a great salad the boys could be spared from eating leafy greens 7 days a week. The result is a total drain on my menu planning. I am longing for some yummy soups, casseroles and chili's. Not to mention they are some of the easiest menus to cook. Soups are great for using all the leftovers in the fridge, a little of this a little of that and voila! Fall is coming and I will soon get to enjoy yummy baking and what have you......

Childhood cookies

These were THE cookies I made growing up. The first cookies I made. The cookies mom always asked "how much batter did you eat".
They always turned out yummy, soft and thick. I think I actually made them better when I was younger. I'm not sure they like cooking on my stone. They just never plump like they did as a young girl.
But the taste...ohhh, THAT hasn't changed! They are soft and yummy. With or without milk!

Chocolate Chip Cookies
4 eggs
3 cubes margarine
1 1/2 C brown sugar
1 1/2 C sugar
2 tsp salt
2 tsp baking soda
2 tsp vanilla
2 tsp water
mix together well then add:
4 1/2 cups flour
1 1/2 cup chocolate chips
Bake at 350 for 13 minutes or less. Do not overbake.

I find that 2 am is a great time to blog surf. I am usually at work and trying to get through the quiet early morning hours. Once I have put everyone down, completed my charting I get to-hopefully- take a break.

Dear son #3 officailly turns 6 today. I love this idea with balloons. I think I will do it while he is at school today. Maybe I can do a bit more too, except kindergarten gets out at 11:45. Hmm, I may have to work fast!

On a side note, I am gonna have to try this dressing recipe! YUM!

I love Sticky Finger salad. This will have to make it onto my menu for next week...

Cinnabon Rolls

One of my friends on Pinching your pennies asked for our favorite cinnamon roll recipe. She mentioned she loves Cinnabon Rolls so I shared the recipe. I have never had 'real' Cinnabon Rolls but my mom-in-law gave this to me several years ago. They are great! Just melt in your mouth!

Cinnabon Rolls
Rolls:
1/2 cup warm water
2 pkgs dry yeast
2 Tb sugar
3 1/2 oz pkg instant vanilla pudding mix
1/2 cup margarine- melted
2 eggs
1 tsp salt
6 cups flour

Cream Cheese Frosting
8 oz cream cheese
1/2 cup margarine
1 tsp vanilla
3 cups confectioner's sugar
1 Tb milk
mix until smooth

In a bowl combine water, yeast and sugar. Stir until dissolved. Set aside.

In a large bowl, take pudding mix and prepare according to package directions. Add margarine, eggs and salt. Mix well. Then add yeast mixture. Blend

Gradually add flour; knead until smooth. Place in a greased bowl. Cover and let rise until doubled. Punch down and let rise again.

Then roll out on floured board to 34x21" size. Take 1 cup soft butter and spread over surface. In bowl, mix 2 cups brown sugar and 4 tsp cinnamon. Sprinkle over the tops. Roll up very tightly. Cut every 2".

Place on lightly greased cookies sheet 2" apart.
Take hand and lightly pres down on each roll.
Cover and let rise until double again. Bake at 350 15-20 minutes. Remove when they start to turn golden. DON'T OVER BAKE.

Frost, Enjoy them melt in your mouth!

Pantry cooking menu; Swedish Meatballs

I planned more than a week of meals this time. It just kinda came together that way. I don't mind either because then I can, hopefully, make fewer trips to the store. I also tried to focus on menu items from our pantry. I noticed I had a few items running low so I took the opportunity of the current case lot sales to restock. Case lot sales usually only happen a couple times of the year, fall and spring. We also have a freezer but haven't yet restocked our beef. We are on the list for when my uncle has another cow ready. Homegrown beef is the only way to go!
So here is what we are planning the next week or so....
Oven Fried Chicken
Super fast Pasta Bake
Pizza
Navajoo Tacos
Grilled Chicken Salad
Enchiladas
Easy Cheesy Chicken Salad
Shepherd's Pie
Smothered Steak 

With each meal I generally add a vegi side and perhaps some pasta or potatoes, whichever goes well.
I am hoping to make some freezer meals this next weeks too. I need those meals to help with the nights I just don't feel like cooking. Some of them are crockpot meals others are frozen in foil pans; makes clean up a breeze!

Easy Swedish Meatballs
from Girlfriends on the Go
30 pre-cooked frozen meatballs
1 pkg country gravy mix
1 cup sour cream
egg noodles
Prepare gravy according to directions. Mix with sour cream, if freezing place with meatballs in freezer bag and freeze. Otherwise, heat until meatballs are heated through. Serve over noodles.

You can purchase premade meatballs or make your own. I like their recipe for Italian Meatballs

Italian Meatballs
Girlfriends on the Go
1 lb lean ground beef
1 cup Italian bread crumbs
1/2 cups shredded parmesan cheese
1 Tbsp fresh minced parsley or 1 tsp dried
1 minced garlic clove
1/2 cup milk
1 egg
Combine ingredients; form into meatballs and bake at 400 deg for 20 minutes.

I also want to make some dry ranch mix. I found a recipe on Allrecipes.com but does anyone have a tried and true recipe? I would like to keep some of this in the pantry.....

Cinnamon Raisin Bread!

This week I wanted to do some baking. I only have a kitchen aid mixer so most of the time I have to cut recipes in half. I don't mind. It does limit how long the goods last though.
It didn't take long for my 4 boys to devour one of these loaves of cinnamon raisin bread! As usual I had to remind them to save some for dad.
I guess that is the true test of how yummy a recipe is. Yep, this one passed with flying colors!

Cooking from my Pantry Menu....Oatmeal Cookies recipe

With finishing the bedroom and having my family retreat here this last weekend my budget has gone overboard. In a desperate effort to keep it somewhat on track I have planned a menu to last through the end of the month to just cook from my pantry. I love trying new recipes but I also love having an assortment of recipes to use supplies I generally have on hand. Learning to cook from your pantry is also important in rotating your food storage and all those great coupon deals. Most family cook about 10 different meals. We do more than that but it can be said that my pantry is stocked based on about 10 different meals. I am also hoping to cycle through some of the "goodies" that are collecting dust at the back of the cupboards....
Menu
Crockpot Stroganoff (I have planned this several times but never actually made it)
Spaghetti- dear hubbies favorite, if he is NICE I may even make homemade bread sticks!
Homemade Pizza and sauce with green salad
Chicken and Rice Soup- yummy since we are in the beginnings of a series of storms to hit ever 24hrs.
Roast, Potatoes and Carrots
Pancakes- my boys love breakfast for dinner
Ham and Potatoes with home canned pickled beets

Some of the goodies I hope to make:
Oatmeal Raisin Cookies

My favorite cookie is Oatmeal Raisin. I have tried lots of different recipes but Quaker just GETS IT! I got this from the lid of their oatmeal. Yep, the cookies vanished all right. Occasionally I add chocolate chips too.
Vanishing Oatmeal Raisin Cookies
from Quaker
2 sticks margarine or butter
1 cup brown sugar
1/2 cup sugar
2 eggs
1 tsp vanilla
1 1/2 cup flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt (optional)
3 cups Quaker Oats (quick or old fashioned)
1 cup raisins

Heat oven to 350. Beat together margaine and sugars until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Stir in oats and raisins; mix well. Drop by rounded spoonfulls onto ungreased cookies sheet. Bake 10-12 minutes or until golden brown. Cool 1 minute on cookies heet; remove to wire rack. 
Makes about 4 dozen. You can also make bar cookies. Bake 30-35 minutes in ungreased 9x13 metal baking pan.

Menu Plan, Pinwheels and Olive Garden night!

Have you been over to Jaimie Cooks it up yet? I have linked several of her recipes but if you haven't yet checked her out you should. I love her recipes. They are basic cook from my pantry recipes. I only have to add a couple of ingredients for them. Plus she has great variety. With 4 hungry boys to feed I love the size of her recipes. Of course it's nothing compared to feeding her brood of 5 kids. I have yet to find a recipe of hers we didn't enjoy and get rave reviews from. I am hoping to upgrade my mixer so that I can try more of her yummy bread recipes too. My basic Kitchen Aid is lovely but gets a work out when I make recipes that call for 10-12 cups of flour. I usually cut those in half. Just trying to preserve my prized appliances. 
We love Olive Garden! It is my favorite restaurant. I go just for the soup, salad, and bread sticks. Dear hubby loves pasta so he is a happy camper too. Imagine my utmost delight when Jaimie pops up with the Zuppa Toscana soup, bread sticks and their salad with dressing! OHHH YEAH! Tomorrow night is Olive Garden night here. You are all invited to join us. Dinners at 6pm! Mom cooks, all others do dishes.
I am also on the lookout for a fun St Patty's day dinner. I think I will make Mint Chocolate Chip cupcakes and plan on having a green salad and I might serve it in that order too ;-). I still need a main dish. I have seen (in the past) fun meals for this holiday but I will need to search a bit more tonight. If you have a suggestion please let me know!
The end of the week will be with family arriving for a Spring Family Retreat. I planned something easy that everyone could munch on as they arrived in town. 
On the menu this week....
Tuesday: Chicken and Black Bean Quesadillas
Wednesday: Hamburger Pinwheels
Thursday: St Patty's meal with mint chocolate chips cupcakes
Friday: Papa Murphy's Pizza as family arrives for our retreat

Saturday: B: Pancakes, fruit, bacon
L: BBQ or else eating out
D: Ham, Cheesy potatoes, green salad, jello
Sunday: Farmers Breakfast Casserole 
L: Sloppy Joes as everyone heads out for home.

One of my favorite recipes is so simple. 
Hamburger Pinwheels
1# hamburger browned with an onion
mix your favorite biscuit dough (I use bisquick) and roll out. Spread hamburger over dough and roll up like a cinnamon roll. Bake according to biscuit directions. Serve with tomatoe soup or gravy over the top. We like the tomatoe soup along with a green salad or green beans. My boys love this a gobble it up. It's not dear hubby's favorite but he enjoys it. I just have to plan spagetti or some other pasta dish to keep a balance he hehe.
