Strawberry Banana Omelet
from Taste of Homes Quick Cooking 2007
3 Tbsp Butter, divided
2 Tbsp brown sugar
1/8 tsp ground cinnamon
2 medium firm bananas, sliced
1/4 tsp vanilla extract
1 1/2 cups sliced fresh strawberries
2 Tbsp water
1/2 tsp salt
In a small saucepan, heat 1 Tbsp butter, brown sugar and cinnamon over medium heat until sugar is dissolved. Add bananas and vanilla; toss to coat. Remove from the heat; stir in strawberries. Set aside.
In a large bowl, beat the eggs, water nad salt. Heat remaining butter in a 10 in. nonstick skillet over medium heat; add egg mixture. As eggs set, lift edges, letting uncooked portion flow underneath.
When eggs are almost set, spread two-thirds of fruit mixture over one side; fold omelet over filling. Cover and cook for 1-2 minutes or until heated through. Slide onto a serving plate; tops with remaining fruit mixture and dust with powdered sugar.
Lemon Herb Chicken Ring

2 cups chopped cooked chicken
1/2 cup diced red bell pepper
3 Tbsp chopped fresh parsley
2 pressed garlic cloves
1c shredded mozzarella
1/2 cup mayo
1 tsp Italian Seasoning
1/2 cup grated Parmesan
2 pkg crescent rolls
Spread crescent rolls in a circle with tips pointed out. Combine other items and scoop onto rolls. Pull points over. Sprinkle Parmesan over ring.
Bake 28-30 minutes or until golden brown at 375 degrees.
