Baked Potato Casserole

Baked Potato Casserole
from Girlfriends on the Go

1 pkg frozen shredded hash browns
(if your cooking this right away you can use fresh potatoes)
1 cup cooked and crumbled bacon or real bacon bits
1 pint sour cream
1/2 cup butter or margarine, divided
2 cups shredded cheddar cheese
1/2 cup chopped green onions
1/2 cup seasoned bread crumbs

Mix together hash browns, bacon, sour cream, 1/4 cup melted butter, cheese, and onions. Place in 9x13 pan. Sprinkle with bread crumbs and top with remaining dabs of butter. Bake at 375 x 1 hr. You can also place this in a foil pan, cover, label and freeze for a meal at hand for one of those crazy busy nights.

My activity day girls made a couple of these up and presented to the Relief Society President to be used for meals for the sick in our ward. You never know when you will need a quick last minute meal for someone.
