Whats on the Menu...strawberry banana omelet....

Here's this weeks menu. I planned 2 weeks at a time but this time it didn't seem to come together real easily. Funny how sometimes the menu literally falls together and other times is seems to fall apart. Maybe it's time for me to surf a few cooking blogs again. Or, maybe holiday treats are just more enticing than dinners. Either way I hope seeing what I planned will help you with your menus.....

Monday: Sweet Teryaki Chicken
Tuesday: Creamy Ham Fettuccine
Wednesday: Strawberry Banana Omelets (a surprising mix of yumminess)
Thursday: Pork Roast with cranberry sauce
from Real Mom Kitchen; I much prefer the homemade sauce
Friday: Soup and Grilled Cheese
Saturday: Spaghetti

Strawberry Banana Omelet
from Taste of Homes 2007 Quick Cooking
3 Tbs butter, divided
2 Tbs brown sugar
1/8 tsp ground cinnamon
2 medium firm bananas, sliced
1/4 tsp vanilla extract
1 1/2 cups sliced fresh strawberries
6 eggs
2 Tbs water
1/2 tsp salt
Powdered sugar
In a small saucepan, heat 1 Tbs butter, brown sugar and cinnamon over medium heat until sugar is dissolved. Add bananas and vanilla; toss to coat. Remove from the heat; stir in strawberries. Set aside.
In a large bowl, beat the eggs, water and salt. Heat remaining butter in a 10 in. nonstick skillet over medium heat; add egg mixture. As eggs set. lift edges, letting uncooked portion flow underneath.
When eggs are almost set, spread 2/3 of fruit mixture over one side; fold omelet over filling. Cover and cook for 1-2 minutes or until heated through. Slide onto serving plate; top with remaining fruit mixture and dust with powder sugar.
