Holiday Recipes

I spent the day baking today and thought I would share my holiday favorite recipes.
Tonight I made Gingersnap cookies from Jaimie cooks it up. 
They are yummy and easy. Dear Hubby enjoyed the way the house smelled when he walked in too.
I am not a great candy maker but when you have a fudge recipe as easy as this one you can't mess it up.
Each year I make this cheese ball for my neighbors....

Pineapple Cheese Ball
2 large cream cheese
1 8 oz can crushed pineapple- well drained
2 cups chopped nuts
1/4 cup chopped green peppers
2 Tbs chopped onion
2 tsp seasoned salt
Stir together, roll in 2 cups nuts and chill. Serve with crackers.
For my neighbors I just cover it with saran wrap and put a bow and label on top. Then I give a box or sleeve of crackers to go along with it.
I love this cuz it's inexpensive but my neighbors have requested it when I opted for something else. And of course it's easy!


Million Dollar Fudge

4 cups sugar
1 pint heavy whipping cream
2 cubes butter
3- 7 oz bars of chocolate (I like Hershey's Symphony bars with toffee bits)
Mix sugar and cream in LARGE pan. Cover, heat to boiling without stirring. Leave lid on until it boils. Cook to softball stage. Remove from heat, cut in butter. Break up chocolate in a large bowl. Pour hot mixture over chocolate. Spread in a 9x13 pan. Let cool. Put in freezer for 45 minutes. Cut and serve.

I line my dish with foil, spray it with non-stick spray. Then I can just pull out the foil and cut it easier.
This time I found a pizza cutter worked wonderfully.
Popcorn Ring
3 1/2 gt popped popcorn
1 cup Spanish peanuts
1 cup spiced gum drops
36 large marshmallows
1 cube butter
Melt butter and marshmallows together. Mix in remaining ingredients and press into bunt pan and let set up.
Christmas Wreaths
2 cubes margarine
68 marshmallows
9 cups corn flakes
2 tsp green food coloring 
vanilla
Melt margarine and marshmallows. Add coloring and vanilla. Stir in cornflakes until thoroughly covered. Shape into wreaths and decorate with red hots.

Caramels
1 cup sugar
3/4 cup dark or light corn syrup
1/2 cup butter or margarine
1 cup light cream
1/2 cups chopped nuts
1/2 tsp vanilla
In a heavy 2 quart pan, combine sugar, corn syrup, butter and 1/22 cup of the cream; bring to boiling over low heat, stirring constantly. Slowly stir in remaining 1/2  cup cream. Cook over low heat to medium ball stage, stirring almost constantly toward the end. Remove from heat; add nuts and vanilla. Pour into buttered 9x5x3 inch pan. Mark in 32 squares when partially cool. Cut when cold. Wrap and store in airtight container.
